Gluten Free Chili
Dr. Loerch loves to cook. She and her family eat gluten free and from time to time we will post a few recipes to try out!
Why we love it: During the cold days of the winter months, having a nice bowl of chili packed with nutrients will help keep you feeling full, and maybe a little warmer. The great thing about this is it’s super simple to make, and is a great meal prep item! If you make too much you can freeze it for later consumption ( just don’t add the beans when you freeze).
Ingredients:
1 lb. ground meat
1 yellow onion, diced
1 green bell pepper, diced
1 (15 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
½ teaspoon cayenne pepper
½ teaspoon paprika
2(15 ounce) can kidenybeans, drained
1-2 jalapenos diced
Instructions:
- Cook ground meat, onions, and bell pepper in large pot until the ground meat is cooked through and the onions are translucent.
- Add diced tomatoes, tomato sauce, seasonings, and jalapeno, and bring to a boil.
- Add beans and cover, let simmer for 30 minutes.
- Serve hot with optional gluten free/dairy free toppings.
