Gluten Free Chili

Dr. Loerch loves to cook. She and her family eat gluten free and from time to time we will post a few recipes to try out!

Why we love it: During the cold days of the winter months, having a nice bowl of chili packed with nutrients will help keep you feeling full, and maybe a little warmer. The great thing about this is it’s super simple to make, and is a great meal prep item! If you make too much you can freeze it for later consumption ( just don’t add the beans when you freeze).

Ingredients:

1 lb. ground meat
1 yellow onion, diced
1 green bell pepper, diced
1 (15 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
½ teaspoon cayenne pepper
½ teaspoon paprika 
2(15 ounce) can kidenybeans, drained 
1-2 jalapenos diced 

Instructions:

  1. Cook ground meat, onions, and bell pepper in large pot until the ground meat is cooked through and the onions are translucent.
  2. Add diced tomatoes, tomato sauce, seasonings, and jalapeno, and bring to a boil.
  3. Add beans and cover, let simmer for 30 minutes.
  4. Serve hot with optional gluten free/dairy free toppings.
